Did you know that making a plate of classic carbonara is simpler than you think? Traditional Italian carbonara essentially consists of pasta, bacon, eggs, cheese, salt and pepper. Nowadays, people always try to add cream and many other types of seasonings to their carbonara; yet the most traditional way of making this classic dish is by mixing the hot pasta straight from boiling water into the egg & cheese mixture. The temperature of the pasta will then cook the egg just right and a creamy, rich sauce would be formed.
Now I am going to tell you how NOT so simple to make a nice plate of carbonara. Traditionally, Italians would either use guaniciale (bacon made of pork cheek) or pancetta (bacon made of pork belly) for their carbonara, which have a stronger flavour (not just saltiness) and a better texture. And of course good quality parmesan cheese and fresh pastas would also bring it to another level! Simplylife is a chain western fusion restaurant in Hong Kong that is being part of the Maxims group, it is one of the few restaurants that use guaniciale and fresh pasta to cook their carbonara.
Your attention will soon be caught by the vibrant looking cakes and tarts inside their display fridge when you walk into the restaurant. I personally like the look of their fig tart a lot but taste-wise I enjoyed their cheesecakes the best 🙂
Their lunch set would allow you to try out their dishes (including their carbonara) at a rather reasonable price. With the set, you get to have a soup as your appetiser (mine was pumpkin soup) and a drink.
The carbonara was for mr. ironman and I had this bagel with scrambled eggs, smoked salmon and cream cheese. This portion could probably able to feed two people.
They bake their bread at their kitchen so you can buy some home as well.
I just have a lot to say about this place! They have a lot of Asian fusion dishes like rice paper roll with soft shell crab too; it’s a place that you can go for brunch, tea or dinner.
The only downside of this place is they don’t serve good coffee.. I have given them a few chances (because I really needed a coffee in the morning) but I would probably not add extra money to upgrade my drink of the set meal to a cappuccino anymore. Instead, the (orange) iced tea that comes with the set is definitely worthy of a try!
